Chef Bill Boutwell began his culinary odyssey as a boy in
southern New Hampshire where his mother and grandmother
taught him the craft of home cooking. At 13 he found his
first job in the food service industry as a dishwasher at a
local camp. By 16 he had found a mentor in Chef Jerry
Willis. Throughout his high school career Boutwell worked
at Willis's Powder Mill Pond Restaurant, where he got his
first taste of restaurant life. Then upon graduation he was
off to the Culinary Institute of America to hone the skills
he learned as Chef Willis's apprentice and to pursue his
dreams!
Since his graduation from the Culinary Institute of America
in 1988 Chef Boutwell has had the opportunity to practice
his art in a variety of settings. At the White Mountain
Conference Center in Waterville Valley New Hampshire he
gained valuable experience in high volume production. A
move to the southern coast of Maine exposed Chef to the
rigors of running a gourmet restaurant in a seasonal venue.
During his three-year tenure at Seascapes restaurant in
Cape Porpoise, Maine Chef Boutwell fed both celebrities and
the president and he met his wife and business partner
Andrea Raymond. One more move up the coast brought Boutwell
to Maine's largest city and introduced him to the
challenges of working as a chef in a corporately run hotel.
While at Cafe Stroudwater at the Embassy Suites hotel in
Portland Bill and his staff received numerous write ups and
recognition such as a five star rating from the Portland
Press Herald Maine Sunday Telegram for Maine's only Chefs
Table and a feature article in Downeast Magazine.
Currently Bill and wife Andrea own and operate BiBo's Madd
Apple Cafe, located in the heart of Portland's Arts
District at 23 Forest Ave. next to the Portland Stage
Company. Since taking over their current operation in
February of 1999 they have received a five star rating in
the Portland Press Herald, been featured in Downeast
Magazine and included in an article in Food Arts Magazine.
Bill's great skill in pairing food and wine has shone in
his winemaker dinners that have been presented by
winemakers such as Chris Tietje of Four Vines Winery and
Kevin Hall of Alexander Valley Vineyards. These dinners
show the emphasis that is put upon fresh local ingredients,
presentations, and wine as a food accompaniment and are
always customer favorites. Bill and Andrea reside in South
Portland with their son Wilson who can be seen many days
helping out at BiBo's.

Brunch: Sunday: 11 to 2
Dinner: Wednesday thru Saturday: 5:30 to close
